Étouffée (translation: “stifled”) is a popular Cajun stew, typically served over steamed white rice and cooked using a technique called “smothering.” A mixture of crawfish (or other meats and seafoods) and vegetables are cooked in a covered pan over low heat and covered (or “smothered”) with a generous amount of broth and various spices.
